Kantin — Rainforest Cafe at Jewel Changi
Perched beneath Jewel Changi’s glass canopy, Kantin feels part rainforest hideout, part airport daydream. It’s Singapore’s first dedicated Bornean concept, a transportive stopover where Dayak traditions meet playful plating and a cocktail of jungle herbs, gula apong, and smoky grills.
🎋Headhunter Pansuh Set
Chicken is cooked pansuh-style - gently steamed with aromatics inside bamboo, then served as a generous tableau with purple Bario rice, keropok, and an ensemble of pickled and sautéed sides. It’s rustic, aromatic, and deeply comforting; the bamboo imparts a clean, woodsy sweetness that frames the broth. A table-stopper that also teaches you something about Sarawak.
🍜Sarawak Laksa
A spice-rich, coconut-laced broth with prawns, chicken, and egg ribbons. More herbal and complex than fiery — authentic to Sarawak, but gentler than Singapore’s laksa.
🐟Salmon Island
A wink to “Western but Borneo,” this crowd-pleaser lands a crisp-skinned fillet on a little “island” of mash and vegetables, ringed by a mellow tomato-cream. Comforting and familiar, but less adventurous compared to the rest of the menu.
🐑Kambing Asap
Smoked lamb, done Borneo-style. The cubes arrive char-kissed and fragrant, juicy and savoury without strong gaminess.
🦑Sotong Bakar
A whole squid, marinated Dayak-style, brushed with a gula-apong glaze, then grilled till it wears those perfect tiger stripes. The bite is tender with flavours that balance char, sea brine, and gentle caramel, that’s lifted further when dipped in sambal.
🍨Cempedak Ice-Cream
Vanilla ice-cream crowned with lush cempedak sauce and a savoury crumble for crunch. The ideal cool-down after a meal of smoke and spice.
