Located on Level 33 of Courtyard by Marriott Singapore Novena, Las Palmas continues to distinguish itself as a stylish rooftop destination with the launch of Las Palmas Cocktail Volume 2.0. Conceptualised by Head Bartender Ron Aransay, the refreshed cocktail programme draws inspiration from the glamour, optimism and cultural renaissance of 1960s Palm Springs - an era shaped by icons of film, music and art.
Rooted in storytelling and thoughtful craftsmanship, the new menu reimagines modern classics through a contemporary lens while maintaining an approachable and relaxed drinking experience. Each cocktail reflects a sense of escapism, perfectly suited for sunset moments and late-night conversations against sweeping city views.
The menu is structured across four thematic chapters - Modernist, Vinyl, Hollywood, and Getaway - each inspired by a distinct cultural influence of the decade. Together, they offer a cohesive yet diverse exploration of 1960s American creativity.
Highlights from the Modernist section include Tokyo Cowboy, a visually striking cocktail inspired by mid-century art and design, featuring rice-paper elements that transition from sunset to starlight. Atomic-O Martini delivers a playful yet indulgent take on the espresso martini, blending cognac with Oreo shavings for a refined yet approachable profile.
In Vinyl, musical influences take centre stage. Bamba Paloma offers a velvety reinterpretation of the classic Paloma, while Jungle Blues delivers a tropical-leaning Old Fashioned that balances depth with vibrancy - both reflecting the dynamic rhythms of the era.
The Hollywood chapter introduces cocktails with cinematic flair. Slick Rick presents a layered whisky composition with floral notes, while Film Noir offers a milk-washed Earl Grey highball that is elegant, restrained, and well-suited to Singapore's climate.
Completing the journey, Getaway embraces tiki escapism and Californian leisure. Drinks such as Tropical Vic and Luau pay homage to Polynesian pop culture and the laid-back spirit of coastal retreats, while the returning Rose Bowl Spritz nods to California's love of social gatherings and outdoor celebrations.
