Meadesmoore — Singapore's Hidden Steakhouse Gem
This is a restaurant that I’d like to gatekeep as it’s honestly one of my favourite steakhouses in Singapore.
Tucked away on the second floor of a heritage shophouse along Boon Tat Street, Meadesmoore redefines the steakhouse experience in Singapore. Led by Executive Chef Victor Loy, this modern steakhouse pays homage to the grand steakhouses of the early 1900s while infusing contemporary flair and inventive pairings.
Meadesmoore’s refreshed menu introduces a medley of starters that challenge traditional expectations. The Dry-Aged Wagyu Beef Tartare combines the nutty sweetness of sunchoke with the fruity tang of pickled beetroot, creating a delightful contrast of textures and flavors. For a seafood twist, the Sakoshi Bay Oyster Croustillant features plump oysters from Japan’s Sakoshi Bay, encased in a crispy prawn and anchovy croustillant, and topped with marinated apple. The Chimichurri Crusted Bone Marrow, lavishly coated in an herbaceous chimichurri parmesan crust, offers a rich and savory indulgence, perfectly complemented by warm sourdough.
At the heart of Meadesmoore’s offerings are its exceptional cuts of beef. The N34 Garnet New York Strip, sourced from Hokkaido, Japan, offers a perfect balance of richness and tenderness, appealing to steak aficionados. For those seeking variety, the Meadesmoore Cut presents a unique blend of three muscles between the ribeye and chuck, delivering a spectrum of textures and marbling in one steak, ideal for sharing among 3-4 people. Seafood lovers can delight in the French Turbot grilled to perfection and served with roasted bone jus and Arbequina extra virgin olive oil, offering a light, delicate, and buttery flavor.
To conclude the meal, the Pavlova Flotante offers a refreshing finale. This delicate dessert features seasonal fruit sorbet nestled inside a crisp meringue shell, crowned with whipped cream and an assortment of fresh fruits, all sitting in a chilled, flavorful fruit gazpacho.
