Morsels’ Of Hearth and Harvest collaboration with Bord Bia (happening now to 21 Nov 2025) is a polished meeting of Irish provenance and Asian fermentation - subtle, confident and deeply seasonally attuned.

The tasting menu opens with a bright Busker Light whisky highball before moving into an expressive trio of Ostra Regal Amulette oysters, each layered with kombu, Guinness, sake kasu or preserved lemon to highlight brine, smoke and umami in different shades.

The smoked Silverhill duck, glazed with Fercullen whisky and set over Upgrain mazemen with Guinness dashi and local Fogo Fungi, captures the spirit of the collaboration: rich yet lifted, familiar yet reimagined. The John Stone beef hammer shin follows with a sake-kasu stroganoff and malfadine, its depth balanced by pickled kale and Chinese celery oil.

Dessert lands on a playful but refined note with a Five Farms Irish Cream “tiramiso,” threaded with shiro miso and Horlicks for a savoury-malted finish.

At $108++, it’s a quietly luxurious, well-calibrated journey through Irish produce and Morsels’ signature fermented warmth - elegant, comforting and beautifully thought through.
