Noa Lounge — New Opening
Located along Neil Road, Noa by Olivia enters a new phase with the appointment of Martí Martínez as Executive Head Chef. Bringing experience from Michelin-starred kitchens across Europe, Chef Martí introduces a more focused and confident culinary identity - one that emphasises ingredient quality, technical precision, and a refined interpretation of Mediterranean cuisine.
This shift is immediately evident from the opening dishes. The Hummus Salad is clean and well-balanced, featuring a smooth house-made hummus complemented by fresh vegetables and subtle sweetness from grapes. Paired with warm, lightly crisp Pita Bread, it sets a strong foundation rooted in simplicity and quality produce.
The starters reflect both familiarity and creativity. The Noa Bomba stands out as a signature - a crisp squid ink crust encasing a flavourful spiced beef filling, balanced by brava sauce and garlic aioli. The Falafel, while classic, is executed with care, offering a crisp exterior and well-seasoned interior, accompanied by za’atar yoghurt and tahini.
More refined plates highlight Chef Martí’s technical strengths. The Tuna Loin Ajo Blanco is particularly notable, combining delicate tuna with a chilled, creamy ajo blanco, lifted by grapes and basil oil. The dish demonstrates a thoughtful balance of richness and freshness, with a clear nod to Southern Spanish influences.
Among the mains, the Roasted Black Cod is well-executed, with a caramelised miso glaze complemented by herbaceous green mojo picón. The Presa Ibérica delivers depth and richness, with tender meat and a well-paired carrot purée adding both texture and subtle sweetness. For a more substantial option, the Argentinian Prawn Rice offers a deeply flavoured, seafood-forward profile, reflecting traditional Spanish influences with a refined finish.
Desserts remain a strong point. The Tiramisu is well-balanced with layers of mascarpone cream and coffee-soaked ladyfingers, while Olivia’s signature cheesecake - known for its distinctive blend of cream cheese and blue cheese - provides a balanced sweet-savoury conclusion.
