Fresh from its relaunch, SanSara at Grand Copthorne Waterfront presents its most ambitious showcase yet: "Spice & Sophistication," a French x Indian Four-Hands Dinner running from 5 - 18 December 2025. This limited-time experience captures SanSara's renewed vision - where North Indian heritage meets contemporary refinement.

This exclusive collaboration brings together Chef Eric Costille, Vice President of Global F&B at Millennium Hotels & Resorts, and Master Chef Pannalal Nath, SanSara's Indian Chef de Cuisine. Though shaped by different culinary traditions, the two found common ground in flavour, storytelling and a shared desire to honour their roots. The result is a menu that blends French precision with Indian soulfulness - a thoughtful dialogue between two culinary worlds.

🪷 Amuse Bouche & Shooter — A playful and aromatic opening act that sets the tone: spice, texture and intrigue.

🪷 Tali Hokkaido Scallops — Plump Hokkaido scallops lightly marinated with turmeric and ginger, served with basil aioli.

🪷 Kumbh Ki Galouti — A delicate minced-mushroom cake with nutmeg, sautéed porcini and truffle ricotta: a refined, vegetarian-friendly reinterpretation of a signature.

🪷 Silver Hill Duck Two Ways — A clever play between French-style Canard à l'Orange and the comforting richness of biryani, featuring tandoor-roasted duck breast. The two-pronged approach promises both elegance and homely heartiness.

🪷 Pav-Halwa — A whimsical finale marrying French meringue technique with Indian sweetness: served in a coconut shell, with vanilla Chantilly, mango-passion saffron centre, pineapple, and lime zest - light yet vibrant, with a tropical flourish.
