Nestled in the heart of Singapore’s CBD, The Exchange Singapore offers a modern Australasian dining experience with a twist.

Executive Chef Jenna White’s revamped menu features savory sweet modern Asian fusion dishes such as the deep-fried egg, perfectly complemented by sambal and fresh herbs and sweet clams in a hot and sour broth with crusty bread. The snapper crudo, with kaffir lime and jalapeno, is a zesty and refreshing appetiser. As for the main courses, we had the beef rendang ragu with pappardelle and herbs, and the pan-fried seabass, served with cauliflower puree, spiced chickpeas, and fried curry leaves. The star of the show was the lamb T-bone, beautifully paired with roasted pumpkin, asparagus and massaman curry.
