The Masses x Onlewo — Chef Collaboration Menu

Two of Singapore’s most dynamic young chefs, Chef Dylan Ong of The Masses and Chef Gwyneth Ang of One Prawn & Co, come together for their first-ever collaboration, paying tribute to the flavours of their childhoods.

On 12 September, The Masses will present a 9-course collaboration menu ($98++), with an optional four-pour wine pairing ($38++). From 12–20 September, a curated à la carte menu will also be available at the restaurant.

On 13 September, One Prawn & Co will host its own exclusive edition of the collaboration with an expanded menu($128++), also available in à la carte form until 20 September.

Highlights of the menu include Rainbow Brioche with umami butter, a playful nod to our beloved childhood ice-cream sandwich bread; Ankimo Mousse in Love Letters, reimagining a festive snack with monkfish liver; and an Iberico Pork Tsukune, inspired by Ngoh Hiang.

Other creations feature Winged Bean with Burrata and Sakura Ebi Tuile, Beef Tongue on Appam “Takoyaki”, and Layered Hispie Cabbage inspired by Yong Tau Foo. You will also enjoy Chef Gwyneth’s Signature Claypot Prawn Noodles, Chef Dylan’s Duo of Duck, and a refreshing Pink Guava & Fennel “Aiyu Jelly” to finish.
