Bymamakwek — Chinchalok with Squid

If you’ve never heard of or tried Chinchalok, it is a traditional Southeast Asian food usually made of fermented tiny shrimps. I was pretty surprised by @bymamakwek rendition of Chinchalok as it’s a little different from the usual! Upon opening the jar of Chinchalok, I was surprised to find a generous amount of fresh thinly-sliced chewy squids!

@bymamakwek Chinchalok takes 3 days to ferment and thus it’s no surprise that her Chinchalok brims full of naturally-developed umami flavour from the squid chunks, crunchy marinated onion silvers and sesame seeds with hints of ginger, coriander and torch ginger flower. Like many fermented food, it is usually eaten as a condiment or used as an ingredient in cooking. Piquant and refreshing, it has that spiciness and zest to it that serves as a great appetiser and pairs really well with a bowl of rice. Perfect to stock them up in your fridge as it’s a versatile flavour-enhancer that goes pretty well with anything.
