Wrapped in Din Tai Fung’s signature 18-fold pleats, each dumpling swaps the usual savoury broth for a soft, mochi-like skin that gives way to a smooth yam filling. The texture contrast is the real draw here - gently chewy on the outside, velvety and lightly sweet on the inside. The yam flavour is clean and refined rather than heavy, clearly made from carefully selected premium yam, which keeps the sweetness elegant and not cloying.
