Four Seasons Singapore has just introduced a new Chef’s Table experience at One-Ninety Restaurant, and it’s easily one of the more intimate ways to dine at the hotel. Set in a semi-private space overlooking the open kitchen, you’re close enough to watch Chef de Cuisine Valerio Pierantonelli and his team prepare the meal right in front of you, which makes the evening feel personal without being overly formal. The experience is built around a bespoke six-course Italian tasting menu for just 6 to 14 guests.
The Scallop Carpaccio with Caviar was a beautiful start, delicate and clean with just the right touch of richness. But my favourite was Chef Valerio’s take on Tagliolini Cacio e Pepe with Carabineros. The incredibly rich 32-yolk pasta had that silky, almost luxurious texture, while the sweetness of the prawn worked surprisingly well against the salty, peppery cheese sauce.
For the main, the cherrywood-smoked Wagyu Tenderloin arrived beautifully perfumed with smoke, tender and deeply savoury, with the Cocoa-Infused Bourbon Reduction adding a subtle bittersweet depth without overwhelming the beef. And to end, there’s a classic Ricotta & Chocolate-Stuffed Cannoli, keeping the finale unmistakably Italian.
What I liked most is that it doesn’t feel like just another tasting menu. Being able to see the kitchen in action and interact with the chefs makes the whole dinner feel much more immersive, and the semi-private setting is especially nice for birthdays, celebrations or a special group dinner.
The Chef’s Table is currently S$188++ per adult, available for groups of 6 to 14 guests, with dinner from 6pm to 10.30pm. The menu and wine pairing can also be customised for the group.
