Souper Tang is back in Singapore, bringing the herbal soups many used to cross the Causeway for to a new, more contemporary home at Raffles City. What I like is that despite its strong focus on traditional Chinese wellness cuisine, the flavours never feel overly medicinal or “too healthy”.

The Souper Tang Signature Soup is a great introduction: deeply savoury and comforting, with ginseng, chicken, dried scallop and fish maw giving the broth plenty of depth without the bitterness you might expect from herbal soup. For something richer, the Singapore-exclusive Premium Fish Maw & Pork Tripe Pepper Collagen Soup is easily one of the highlights, with a velvety, collagen-rich broth, tender tripe and a warming peppery kick.

There is plenty worth ordering beyond the soups too. The Stir-Fried French Bean with Pu Er stays crunchy with a subtle earthy tea fragrance, while the Jasmine Tea-Infused Sautéed Prawn is lighter and more refined, pairing plump prawns with delicate jasmine notes and barley. The Stewed Yellow Wine Chicken with Tian Ma leans comforting and homely, while the Home Braised Pork Belly is the richer option, with tender meat and a dark savoury sauce perfect with its buns.

Don’t skip the XO Rice Topped with Twice-Fried Emerald Fish Chunks either. The rice is incredibly savoury and flavour-packed, with a mild spicy kick and those addictive crispy toasted bits at the bottom of the hot stone pot.

For dessert, the silky Signature Caramel Beancurd and refreshing Brown Sugar Herbal Jelly with Longan and Peach Gum make for a light, satisfying finish. The Lemonade with Fruit Enzyme and Grapefruit Green Tea are equally refreshing, with bright citrusy notes that balance out the richer dishes nicely.
