Stepping into the elegant lobby of Frasers House, a Luxury Collection Hotel, Singapore feels like revisiting a familiar landmark with a refreshed identity. Formerly known as InterContinental Singapore, the hotel’s iconic Lobby Lounge has embarked on a new chapter, and its first themed afternoon tea, Atelier of Tea and Spice, is a fitting tribute to the rich heritage of Bugis as a historic trading district where spices, teas, and cultures once converged.

The savoury selection strike a balance between familiar comfort and creative flair. The Home-cured Norwegian Salmon Vol-au-vent carried a subtle warmth from Chinese five spice, while the French Duck Rillettes with toasted cumin offered an earthy depth that lingered pleasantly. The Laksa Atlantic Cod Quiche is a clever nod to Singapore’s culinary heritage that beautifully married fragrant laksa spices with delicate cod and sakura ebi. The Spicy Tuna Tartare, topped with avruga caviar, added a refreshing burst of flavour and texture.

The Heritage Tea Granita served as a palate cleanser between courses, providing a refreshing pause and elegantly bridged the transition from the bold spices of the savouries to the delicate sweetness that followed.

I like how each creation from the pastry selection allowed its tea infusion to shine. The Oolong Tea Éclat delivered floral notes layered with passionfruit brightness, while the Lychee English Breakfast Tea Cake combined nostalgic Hainanese-style butter cake flavours with a sophisticated tea-infused finish. The Blue Pea Chamomile Tart and Lemongrass Key Lime Teapot offers delicate flavours that felt light yet satisfying.

Atelier of Tea and Spice successfully combines heritage storytelling with culinary craftsmanship, creating an afternoon tea experience that feels distinctly Singaporean while maintaining the elegance expected of a luxury hotel.
