Chocolate takes centre stage at The Lobby Lounge, Frasers House, a Luxury Collection Hotel, Singapore, but the new Symphony of Chocolate Afternoon Tea is far more interesting than simply loading the tiered stand with chocolate desserts. Created by Frasers House Executive Pastry Chef Jason Goh together with Global Pastry World Champion 2022 Dexter Lee, and in collaboration with French chocolatier Chocolaterie de L’Opéra, the menu explores different chocolate couvertures across both sweet and savoury creations.

Savoury bites

The savouries are where things get surprisingly adventurous. The Duck Foie Gras Parfait comes encased in a Tannea milk chocolate shell, with just enough sweetness to balance the richness of the foie gras. Even more unexpected is the Wagyu Beef Cheek, braised in red wine and paired with dark chocolate and caviar, creating something deep, savoury and almost mole-like in its richness. The Baked Organic Beet with dark chocolate vinaigrette, feta cream, pecans and honey is another clever pairing, while the Smoked Salmon & Spinach Quiche provides a welcome break from the chocolate theme.

Chocolate desserts

The sweets showcase chocolate in a more familiar, but beautifully refined, way. We particularly enjoyed the Jamaya 73% Travel Cake, an intensely chocolatey mud cake brightened by candied orange, and the Spinto 70% Dark Chocolate Mousse with tart Morello cherry confit. The Tannea 43% Milk Chocolate Tart with apricot is gentler and fruitier, while the Arcato Chocolate Hazelnut Choux brings plenty of crunch and nutty praline richness. A mango and passionfruit Bourbon Vanilla Panna Cotta is smartly included too, giving your palate a much-needed refresh between all that cacao.

Fondue, scones and tea

There is an interactive chocolate fondue station, followed by a roving gelato and sorbet trolley, plus classic buttermilk and bitter chocolate scones served with clotted cream, blackcurrant jam and hazelnut chocolate spread. Each set also includes coffee or a selection of TWG loose-leaf teas.
